Allowing multiple payment gateways to be used on a payment form at once would allow greater flexibility to a user, reducing the chance of a lost sale.

You can now add multiple payment method options to a checkout layout.
The docs listed in the eCommerce changelog will give you information on how to do so, and the feature will soon be added to Demo Site for you all to see in action:

This would be great - another use case is during product launches. Sometimes a payment gateway is suspended due to high 'suspicious' activity including a long process of getting access to funds.
But also in general, offerings like PayPal and Stripe provide different things which customers may prefer.

Dean Vizer: What comes to mind is the ability to pay by credit card (outside of PayPal) OR PayPal, OR ACH, etc. - user's choice.

Dean Vizer: Different payment options for users and more convenience, a backup in case one gateway has potential issues or fails, higher sense of security for users are several reasons it should be possible to choose multiple payment gateways.
I feel if users are confined to using just one gateway, they may abandon their cart. Users are more likely to make a purchase if they have full trust in the gateway they use which is why letting them choose is important.
